Significance: Measures the  degree of unsaturation  of fats and oils (higher value = more double bonds). Used to distinguish between  saturated and unsaturated fats . Biochemical Role:  Thiamine is a coenzyme for  pyruvate dehydrogenase, α‑ketoglutarate dehydrogenase, and transketolase  – essential in carbohydrate metabolism.
